Broiled Rainbow Trout With Herb Mayonnaise

  • Combine mayo, garlic, lemon juice, herbs and pepper in bowl; mix well.
  • Cover flesh side of each trout fillet with 1/4 of the mayo mixture.
  • Broil 4" from heat source for about 3-5 minutes, or until fish flakes with a fork and topping is bubbly.

  1. First time ever cooking trout. Got it from a local grocery store on a whim. My father-in-law, who is a long time fisherman and outdoors man, has been staying with us for weeks so far during the Covid-19 pandemic, so I thought it would be nice to prepare a dinner with him in mind. He said it was probably the best trout he has ever had. Great recipe! Turned out great and we'll definitely make many more times!

I am a recently converted pescetarian after watching the movie 'Fast Food Nation.' That's not entirely true, I will eat meat but only if it comes from my boyfriend's cattle farm, someone shoots it during hunting season or it's a pig that's been thrown on the smoker at a pig roast. I know how it was processed so I'm not afraid to eat it. I am also a bartender at a fine dining restaurant in Duncannon, PA - Micheal's Cafe. It's the best food by far that you will get in the area.
