directions

  • Prick the skin of the chicken quarters all over with a fork. Place the chicken in a zip bag and add the lemon juice, oil, garlic, thyme, salt and pepper. Reserve the zest for garnishing later.
  • Close the bag and shake and squish contents to mix well and coat the chicken. Let rest in the refrigerator at least 2 hours.
  • Preheat the broiler or barbecue. Baste chicken with marinade periodically and broil or grill at least 30 - 40 minutes, or until done (the juices will run clear when pierced with a skewer).
  • Serve hot, with lemon zest sprinkled over the chicken.

  1. We really like this chicken. I was lucky enough to find a tiny chicken that I just cut in half for the two of us. It marinated around 4 hours before grilling.

  2. Very good chicken! We used chicken breasts and bbq'ed on the gas grill. To go along with the lemon flavors already in the marinade I added lemon pepper instead of black and a couple shakes of celery seed, my all time favorite. Easy to put together and the chicken is great. Made and reviewed for the Culinary Quest 2016 - Greece.

  3. Delicious broiled chicken! I put it under the broiler and it was perfect within 35 minutes. Very flavourful. Thanks for sharing! Made for Culinary Quest 2016 / Greece "Grill it up Greek style" challenge for team IH?

  4. Good chicken. I used large split broilers for this so cooked a little longer than specified. Loved the flavors and especially the nice zing from the zest. Thanks for sharing, Nan. Made for CQ3 - Greece.

  5. Very yummy chicken! I love to grill, and this is a great recipe....I couldn't find chicken leg quarters in anything less than a 10 lb bag, so I bought thighs and drumsticks. Cut the cooking time down a bit, but left the marinating time alone. I ended up with about 5 hours marinating time. The chicken turned out wonderfully moist and smokey from the grill. Made for Best of 2010 Tag!
