Broccoli Salad With Feta

ingredients
- 3 cups broccoli, raw bite size pieces
- 1⁄2 cup red onion, chopped
- 1⁄4 cup sunflower seeds
- 1⁄2 cup raisins
- 1⁄2 cup feta cheese
- 1⁄2 cup low-fat plain yogurt
- 1⁄2 cup light mayonnaise
- 1 1⁄2 tablespoons sugar
- 1 tablespoon lemon juice
- salt
- pepper
directions
- Mix the first five ingredients in a bowl.
- Combine the the last nine ingredients to form the dressing.
- Add to broccoli mixture.
- Cover and refrigerate for 2 hours before serving.
- Enjoy!

I followed the directions exactly and LOVED this. And (here goes your biggest compliment EVER) my husband ate it!!!!!! He has a very low tolerance to brocolli, raw onions, seeds, raisins, feta, yogurt and lemon! I was sure I was going to be the only one to eat this so I halved the recipe but realy wish I hadn't. Thank you for this wonderful recipe and God Bless.

Like Shannon, I could almost eat the whole bowl of this, and I'm not usually a huge fan of raw broccoli. A double serving is a super lunch in itself since the seeds and cheese add protein. I used fat free yogurt,mayo and feta (a whole 3/4 cup package)and, in the Autumn spirit, substituted pumpkin seeds for the sunflower and craisins for the raisins. Thanks for a great recipe!
