Broccoli Salad With a Twist

This a variation of the traditional broccoli salad with craisins, bacon bits, sunflower seeds, red onion and poppy seed dressing. I came up with this in response to a healthy carry-in challenge where we were encouraged to bring something from a list of 10 ingredients. Cooking time is chill time.

ingredients
- 6 cups broccoli florets, bite size pieces
- 1⁄2 cup red onion, thinly sliced
- 1⁄2 cup dried cranberries
- 1 large apple, diced
- 1⁄2 cup walnuts, chopped
- 8 ounces poppy seed dressing
directions
- Combine all ingredients in a large bowl and mix well.
- Chill 2 hours before serving.

Did cut this recipe in half, but other than that, it was pretty much followed & we had a very satisfying salad! Loved the combo of flavors as made, but my other half read one of the reviews & felt the need to add some feta cheese! Definitely a make-again kind of recipe! Thanks for sharing it! Love this combination of flavors especially the dried cranberries-a favorite in our house! And so easy to put together when you have lots of entertaining to do. I was concerned that the apple would turn brown but the dressing prevented that from happening. Had this today as part of Fourth of July cook out. It was gone before I had a chance to take a picture. WOW. Loved it. Was really nice when only 1 hour old, but the left overs for lunch the next day were even better. So 12 - 24 hours marinating changes it completely. Don't be scared of trying raw broccoli - done this way it is superb. I used homegirl Poppy dressing #123766 and they really went well together. Can totally recommend this recipe.Reply
