Broccoli-Corn-Cheese Casserole

This recipe is a crowd pleaser and if there is any left over it freezes well - just reheat in microwave. I believe I got this recipe out of the Favorite Recipe section of our newspaper. At family gatherings, I am often asked to bring this dish

Made quite a nice side and is great as it has enough vegies that you only need this with a main. A bit too eggy for me but still tasty, not popular with miss 5 year old but hubby & I both ate it up.

This turned out differently than I expected, but still very delicious! I was not expected the texture to be so egg-y (which should have been obvious, with the ingredients listed). I thought the cottage cheese would be creamier (mine baked up with a grainy texture.) It reminded me of a Bisquick "Impossible Pie." The leftovers made a tasty breakfast, too. Thanks SLDenton for posting. Roxygirl

What luck. I wanted to use fresh broccoli and cottage cheese. I halved this recipe and left out the corn. I loved this and my family loved it. Nice flavors and texture. This is definitely something I will serve for guests. Thanks Chef. PS It is great being able to find recipes by ingredients. Thanks Zaar!
