Broccoli Cheese Soup

Ready In:




  • Combine chicken brouth, water, half& half, cheese, flour, onion and pepper in a large saucepan.
  • Whisk to combine and break up any lumps of flour, then turn heat on medium/high.
  • Bring soup to a boil, then reduce heat to low.
  • Add broccoli to soup and simmer for 15-20 minutes or until broccoli is tender but not soft.
  • For each serving spoon one cup into a bowl and garnish with a teaspoon of sheredded cheese and a pinch of parsley.
  • Makes 6 servings.

    Made this soup today, chopped an entire onion instead of using onion powder and 2 cups whole milk - just because i didn't have half and half on hand. Didn't look nearly cheesy enough, so I upped it to about 15-20 slices of kraft singles. It came out pretty good! Its a very simple recipe, I might recommend adding more pepper and garlic salt to add a little more depth to the flavor, maybe even something else if you're feeling creative.
    With fall in swing, I was looking for a really good home made cheesy broccoli soup. My daughter is just starting to like it which is a miracle in itself. This is easy, and very good. A perfrect comfort recipe. This will be a regular dish in our house!!! Thanks for sharing.

    I made this soup this past weekend, it was not as cheesy as I thought it might be. But I am giving it three stars because of the simplicity of making it. Sorry, but I don't think I will be making this again.

    I liked that it was so easy. But it was not near as cheesy as I like, so after adding another slice of processed cheese, I grated cheddar and added that, plus was very generous with the grated cheddar at the table. Served it with oven bannock for a good, easy dinner.

    Wonderfully easy soup to make. I used a little more oniion and shredded cheddar instead of slices but the rest I did as recipe says. Everyone loved it!

    Used 15 slices of kraft cheese to get to an acceptable level of cheesiness. 4 is not nearly enough! Add garlic powder for extra flavor


I'm disable now for a couple years. I was in sales for 25 years and was a policeman for 5 years before that and just floated around a few years before that. I've been married to the same gal for 30 years, got two sons and two grandchildren. I got into the recipe seen and have got hooked on it, I'm not a cook but I'm learning as I go.
