Brian's Sweet Potato Casserole

"I took this recipe from lots of different recipes to finally end up with the one that my husband, Brian liked the best! Ergo the name...Brian's Sweet Potato Casserole. This is great with Ham or Turkey. Will serve 4 generously or 6 if you plan a few different side dishes. I microwave the Large to Medium sweet potato's on high for approximately 8 minutes each. (poke holes in them with a fork and cover with paper towels prior to putting them in the microwave). Then I run the potato's under cold water. Wait till they are a bit cooler and then peel and chop into chunks. Be careful not to burn you fingers!!"

  • Preheat oven to 350.
  • Grease a 8x8 or 2qt casserole dish with Pam.
  • Cut COOKED potato's in to chunks or thick slices work too.
  • Stir the butter, brown sugar, orange juice and cinnamon into the potato chunks.
  • Spread the sweet potato mixture in to the selected,greased,casserole dish.
  • Sprinkle top of casserole with pecan halves.
  • Sprinkle mini marshmallows on top of pecan halves and casserole.
  • Bake at 350 for about 25-30 minutes.

One major thins I did different when making your recipe was to cook the potatoes & then slice cut them into large, but bite-size pieces, unpeeled, because we enjoy the extra nutrients the peel provides! I know, the casserole doesn't usually look all that attractive because of that, but we do like the taste! I almost left off the marshmallows, but then decided that small amount would likely add very nicely to the finished dish, & it did! Definitely something I'd make again! Thanks for sharing the recipe!
