ingredients
- 2 -4 cups frozen hash browns
- extra virgin olive oil
- 1 -4 slice American cheese
- 1 green bell pepper
- 1 small yellow onion
- sliced mushrooms
- 1 small tomatoes
- 4 eggs
- feta cheese
- hot sauce
directions
- Fry hasbrowns with oil until golden brown and crispy.
- while they are cooking, chop bell pepper, yellow onion and mushrooms and cook on med heat with some oil.
- Once Hasbrowns are done place on a plate and place 2-4 slices of cheese on top.
- Place one egg, cooked to your choice, over easy is best, per slice of cheese.
- Top with cooked veggies.
- Top veggies with crumbled feta.
- Top that with Tomatoes.
- Serve with favorite hot sauce.

Right now I work as a dialysis Tech during the day and a chef for my small family of three during the night. My wife doesn't prefer to cook which is OK because I DO!!! I love finding new things to try.
