Brazilian Daiquiri

This cocktail brings to mind images of warm light breezes, and the sound of waves lapping on the shore. Even its color is that of bronzed beauties tanning on the sand. Two or three of these daiquiris will soon bring out a distinctly carnival feeling! Poncillo is unrefined brown sugar that comes in small cones. You can substitute regular brown sugar. The Cook time is the marinating time.

ingredients
- 1 cup Bacardi light rum
- 1 cup Bacardi dark rum
- 3⁄4 cup myers's rum
- 1 mexican vanilla bean, split lengthwise
- 1 large sweet ripe pineapple, peeled, cored, and cut into eighths
- 2 ounces piloncillo, or
- 3 tablespoons light brown sugar
directions
- Place all ingredients in a clean glass jar, cover tightly, and let sit at room temperature for 48 hours.
- Strain out the pineapple and vanilla. (Don't throw away the pineapple -- it's wonderful served with vanilla ice cream.)
- Put the rum mixture in the freezer until very cold.
- Serve in shot glasses or martini glasses.

When I lived in Santa Fe NM, I would have these on ice at the coyote cantina. They are so good! The outdoor bar kept it in the corner in a huge container, and would serve it on ice in a rocks glass. I plan on making these today, to serve my friends as an easy but amazing drink. What a great Infusion!Reply
