DIRECTIONS

  • Place Pork skin side up in a large roasting dish.
  • Pour the Sauces over the top.
  • Sprinkle Brown Sugar Over.
  • Half fill roasting dish with water.
  • Cover with foil.
  • Bake in the oven 300F for 3 - 4 hours until melt-in-the mouth tender.
  • Cook potatoes, drain then dry over heat.
  • Mash with cream and butter.
  • Steam some seasonal green veges till just done.
  • Divide mash between 4 plates.
  • Cut Pork into serving chunks and arrange over top with some of the cooking liquid.
  • Garnish with green vegetables.
