Braised Pork Belly

This recipe is from the book Good Food New Zealand Style and I am posting it to go in the Spring 2009 Cook Book Swap Favourite Recipes... however, I would like to add it is actually Autumn in New Zealand ... or Fall as you would say in America! I have made this, and the pork was meltingly tender and very flavourful. I really loved it.

ingredients
- 2 -3 kg pork belly
- 1⁄4 cup sweet chili sauce
- 1⁄4 cup oyster sauce
- 4 tablespoons brown sugar
- 4 potatoes
- 1⁄4 cup cream
- 25 g butter
- salt and pepper
directions
- Place Pork skin side up in a large roasting dish.
- Pour the Sauces over the top.
- Sprinkle Brown Sugar Over.
- Half fill roasting dish with water.
- Cover with foil.
- Bake in the oven 300F for 3 - 4 hours until melt-in-the mouth tender.
- Cook potatoes, drain then dry over heat.
- Mash with cream and butter.
- Steam some seasonal green veges till just done.
- Divide mash between 4 plates.
- Cut Pork into serving chunks and arrange over top with some of the cooking liquid.
- Garnish with green vegetables.
