DIRECTIONS

  • Salt and pepper the lamb chops and brown in butter in a large frying pan.
  • Remove chops from pan and cook the onion in the lamb drippings for 5minutes, add the carrot chunks.
  • Mix the french onion soup powder with the cups of boiling water and add to the onion and carrots in the frying pan, simmer for 10minutes.
  • While the soup mixture is simmering, in a bowl put the diced tomatoes, garlic, and soy sauce, mix well.
  • Add the tomato mixture to the frying pan and combine well.
  • Once combined, re-add the lamb chops to the pan, coat well with the mixture and bring to the boil - When boiling, lower to a simmer and cover.
  • Simmer covered for an hour and a half to 2 hours or til fork-tender.
  • Serve over mashed potatoes :-).
