Braised Gnocchi in Tomato Sausage Sauce

- 34 ounces gnocchi, whole wheat prepackaged
- 2 tablespoons olive oil, Extra Virgin
- 1 lb Italian sausage
- 4 teaspoons garlic, minced
- 28 ounces whole tomatoes, Cento is the preferred brand
- 1⁄2 cup chicken broth
- 1 cup mozzarella cheese, shredded
- 1⁄4 cup basil, fresh chopped
- 1 teaspoon rosemary, dried
directions
- Heat an oven proof skillet over medium heat, add the oil.
- Add gnocchi and cook for 10 minutes, stirring occasionally. If you have a smaller skillet, you may need to do this in multiple batches.
- Remove gnocchi to a large bowl and set aside.
- Brown sausage, breaking it into small pieces. Once cooked, add to the gnocchi.
- Add tomato and garlic to the pan, and cook for 2 minutes breaking apart the whole tomato pieces. Add chicken broth, and bring to a simmer.
- Stir in 1/2 of the basil and all of the rosemary. Then add gnocchi mixture.
- Top with the cheese, and broil on HI for 4 minutes or until brown.
- Sprinkle remaining basil on top and serve.
