  • Combine eggs, crushed pineapple, milk, sour cream, maple syrup, sugar and vanilla in a blender and whip until smooth. Transfer to shallow dish.
  • Melt 4 tablespoons butter in large heavy skillet over medium heat.
  • Cut bread diagonally; dip quickly into egg mixture, covering completely.
  • Arrange bread in skillet (do not crowd) and cook until browned, about 3 to 4 minutes per side.
  • Transfer to heated platter. Repeat with remaining bread, adding more butter to skillet as necessary.
  • Sprinkle with powdered sugar and coconut and serve.
