Bon Appetit Pineapple French Toast With Coconut

- 4 eggs
- 8 ounces can crushed pineapple, drained
- 1⁄4 cup milk
- 1 tablespoon sour cream
- 1 tablespoon maple syrup
- 1 tablespoon sugar
- 1 teaspoon vanilla
- 6 tablespoons butter
- 8 slices day-old egg bread
- powdered sugar
- toasted shredded coconut
directions
- Combine eggs, crushed pineapple, milk, sour cream, maple syrup, sugar and vanilla in a blender and whip until smooth. Transfer to shallow dish.
- Melt 4 tablespoons butter in large heavy skillet over medium heat.
- Cut bread diagonally; dip quickly into egg mixture, covering completely.
- Arrange bread in skillet (do not crowd) and cook until browned, about 3 to 4 minutes per side.
- Transfer to heated platter. Repeat with remaining bread, adding more butter to skillet as necessary.
- Sprinkle with powdered sugar and coconut and serve.
