ingredients
- 2 cups cooked quinoa
- 8 cups chopped bok choy
- 1 tablespoon minced fresh ginger
- 2 tablespoons rice vinegar
- 1 1⁄2 tablespoons miso
- 1 tablespoon toasted sesame oil
- 1 tablespoon agave nectar or 1 tablespoon honey
- salt and pepper
directions
- In a large bowl combine quinoa and bok choy.
- In a small bowl, combine remaining ingredients. Add to quinoa and toss gently to combine. Let stand at least 10 minutes before serving.
