Blueberry Topping

- 3 cups blueberries
- 3⁄4 cup sugar
- 2 tablespoons unsalted butter
- 2 tablespoons fresh lemon juice
- 2 tablespoons cornstarch
directions
- Combine all ingredients in a saucepan over medium-high heat. Bring to a simmer, and cook until berries break down, about 4 minutes. .
- Cool the mixture. Scoop over cheesecake, pie or other cake.
- Refrigerate until cold.
- If used by itself, the topping may be stored refrigerated for up to 3 days.
