  • 1 (12 1/2 ounce) can white chicken meat, drained and rinsed or 1 1/2 cups chopped cooked chicken breasts
  • 3 tablespoons crumbled blue cheese
  • 3 tablespoons fat-free mayonnaise
  • 1 medium carrot, shredded
  • 14 cup finely chopped celery
  • 2 tablespoons finely chopped white onions
  • 1 garlic clove, finely chopped
  • 1 pinch salt
  • ground black pepper
  • 6 slices sourdough bread or 6 slices dark rye sandwich bread, toasted

directions

  • In a mixing bowl, combine the chicken, cheese, mayonnaise, carrot, celery, onion, garlic, salt and pepper to taste.
  • Stir to mix.
  • Spread on toasted bread.

  1. Fast and delicious making it a great way to use left over chicken breast meat. We did not use carrots or celery, staying light on the onion is important or it will overpower the blue cheese.
     
  2. This was very good. I did take some liberties with the chicken salad - I left out the celery and onion and added some chopped black olives. I wasn't so careful measuring the ingredients, either, just mixed things up until they tasted right to me. But these are delicious! Will definitely make them again. Thank you for posting.
