- 1⁄2 cup quinoa
- 1 cup apple juice
- 1⁄3 cup blackberry
- 2 tablespoons pomegranate seeds
- 2 tablespoons toasted coconut
- 1⁄4 cup english walnuts
directions
- Rinse quinoa in water to clean. Add rinsed quinoa to a sauce pan with the apple juice. cover and bring to a boil and simmer low for 15 minutes. Fluff with fork, divide and add to two serving bowls, top with fresh fruit, walnuts and toasted cocount.*.
- *To toast coconut place on a cookie sheet under oven broiler for one minute or longer until slightly browned.
