Blackberry Dumplings

This is from my dear Kentucky grandma. We kids used to beg her to make these and we would go pick the berries. You can use your favorite berry.

Blackberries Mix
- 1 quart blackberry, rinsed
- 1 cup water
- 1 cup sugar
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon lemon extract

Dumplings
- 1 1⁄2 cups flour
- 2 teaspoons baking powder
- 1 tablespoon sugar
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon nutmeg
- 2⁄3 cup milk
directions
- Mix berries,water, 1 cup sugar, 1/4 t salt and lemon in large, wide saucepan.
- Bring to a boil.
- Reduce heat and simmer 5 minutes.
- For dumplings: Combine flour,1 T sugar, baking powder, 1/4 t salt, nutmeg and milk.
- Stir until mixed.
- Drop by TBS into berry mixture.
- Cover tightly and simmer 15 minutes.
- Serve in bowls with a dollop of whipped cream.

OMG!!! These were wonderful...iLUV BLACKBERRIES..but didn't think I would like them cooked..the mixture cooked down and became thick, ooey, gooey and SWEET...WONDERFUL..family all LUV THEM...only thing I did different was add a little softened butter and some cinnamon to the dumpling mixture..and cooked the dumplings for about 5 minutes longer than called for..definitly keeping this recipe!!! Going to add a scoop of vanilla ice cream and dig in!!!1Reply

Awesome! My sons love fruit desserts and this was a great last-minute addition to dinner. Used frozen blackberries with good results. Wouldn't change a thing, except next time I'd use a huge pot and double the recipe so we can look forward to leftovers. I didn't choose the recipe because it was more healthy, but looking at it now, it's a great lowfat dessert, too. Lucky us! Will make this again soon! Thanks, MizzNezz!Reply
