- 2 cups and 1-2 tbsp flour
- 2 teaspoons baking powder
- 1⁄2 teaspoon salt
- 1⁄4 cup unsalted butter, softened
- 3⁄4 cup sugar
- 1 large egg
- 1⁄2 cup milk
- 1 pint blackberry
directions
- 1) Preheat the oven to 375°F Grease an 8-inch baking pan.
- 2) Sift together the 2 cups of flour, baking powder and salt. Set aside. In a separate bowl, cream the butter and sugar until fluffy. Beat in the egg. Add the flour mixture in 3 parts, alternating with the milk. Toss the berries and fold inches Pour batter into the prepared pan.
- 3) Bake for 35 minutes.

The recipe instructions were not clear. It didn't say what to do with the 1-2 Tblsp. flour so needless to say I didn't put it in. The cake tasted okay but it was a tad bit gummy. I've never heard of buckle before so I didn't have much to go on. I baked it for 35 minutes and tested with a toothpick. I'm thinking perhaps I should have tossed the berries with the flour so if I make it again I'll try that. Thanks for sharing.
