1 1/2 pound loaf bread

ingredients
- 1 1⁄8 cups water
- 1⁄3 cup molasses
- 1 1⁄2 tablespoons canola oil
- 1 1⁄2 cups bread flour
- 1 cup rye flour
- 1 cup whole wheat flour
- 3 tablespoons baking cocoa
- 1 1⁄2 teaspoons salt
- 1 teaspoon instant espresso powder (optional)
- 1 tablespoon caraway seed
- 2 teaspoons dry yeast
directions
- Place ingredients in the bread machine pan in the order suggested by the manufacturer.
- Select Sweet bread cycle and light crust; start machine.

You did it again Barb, an absolutely fabulous recipe! I made the recipe as written with the exception of using instant coffee granules in place of the espresso powder, and it made the best pumpernickel bread I've ever had. Was very light for pumpernickel, too, which we liked. I'll be making this again and again.

This is an excellent bread! It has a lovely flavour and texture, with a nice chewy crust. My husband and I both fell in love with it. I can see that it will be a regular request in this house. Thanks so much! (I did not use the espresso powder as we don't have that over here, not that I know of anyway)
