Black Eyed Pea Sausage

"My grandmother in Alabama made these years ago as an inexpensive subsitute for pork sausage. My Mom still makes these for me. There was never a real recipe, so the last time she made them, she measured her ingredients as best she could to come up with this. OK, so they don't REALLY taste like sausage, but the sage does give them a hint of sausage flavor. I like these with biscuits but also like them as stand alone snacks or with a plate of veggies and corn bread. This can be made with leftover peas or canned peas."

  • Mix peas, flour, egg, and sage.
  • Shape into 8 patties.
  • Heat oil in skillet over medium heat.
  • Cook patties in oil over medium heat until lightly brown on both sides, 4 to 5 minutes per side.

  1. I don't know what went wrong. I drained the peas well, but even after adding 1/2 cup of flour, it was still too wet to even start shaping a patty. I guess I could have dropped them into hot fat and possibly fried them as fritters. I could not get the mixture to stiffen up. I finally gave up and tossed it because the mixture just tasted like wet flour. Any advice?
  2. These are very versatile and are quite easy to make, but they lacked something in the flavor department - maybe more sage, black pepper, salt.... We first ate these on a bed of lemony/garlicky spinach, which added a lot to the flavor. My huband ate them as a sandwich filling (like a meatloaf sandwich) and I dipped them in ketchup. They do not stand alone well, but add hearty texture to more flavorful sauces or sides.


The joy of my life are my 2 sons, born in Dec. 00 and Jan. 04. I am currently a stay at home mom and love to make homemade meals and treats for my family. I live in PA, but the rest of my family are in AL and GA, and my boys and I spend weeks at a time in the South. I enjoy traveling with my husband and 2 sons. I am an Auburn University Alumni and a HUGE Auburn Tigers fan...WAR EAGLE! From August until November, you know what I'll be doing on Saturdays...watching ANY NCAA game on TV. I am also a fan of NASCAR. I have only been to 2 tracks, Talladega several times and Dover once, but I hope to visit many more. Pocono is only an hour away, so maybe someday! Atlanta is another real possibility with family close by. My furbaby Wickett (a pekinese-poodle mix I had for almost 14 years) went to live at the Rainbow Bridge on April 4, 2007. He was literally my first born child! He will always be in my heart. We have a new dog now, Roxie, who is a Shih-tzu.
