- 1 cup black-eyed peas, cooked and mashed
- 1⁄4 cup flour
- 1 egg, lightly beaten
- 1⁄4 teaspoon sage
- 2 tablespoons oil
directions
- Mix peas, flour, egg, and sage.
- Shape into 8 patties.
- Heat oil in skillet over medium heat.
- Cook patties in oil over medium heat until lightly brown on both sides, 4 to 5 minutes per side.

I don't know what went wrong. I drained the peas well, but even after adding 1/2 cup of flour, it was still too wet to even start shaping a patty. I guess I could have dropped them into hot fat and possibly fried them as fritters. I could not get the mixture to stiffen up. I finally gave up and tossed it because the mixture just tasted like wet flour. Any advice?

These are very versatile and are quite easy to make, but they lacked something in the flavor department - maybe more sage, black pepper, salt.... We first ate these on a bed of lemony/garlicky spinach, which added a lot to the flavor. My huband ate them as a sandwich filling (like a meatloaf sandwich) and I dipped them in ketchup. They do not stand alone well, but add hearty texture to more flavorful sauces or sides.

My furbaby Wickett (a pekinese-poodle mix I had for almost 14 years) went to live at the Rainbow Bridge on April 4, 2007. He was literally my first born child! He will always be in my heart. We have a new dog now, Roxie, who is a Shih-tzu. I am an animal lover, and will always have a pet!
