  • Stir together dry ingredients.
  • In separate bowl, mix liquids together, then add to dry ingredient mixture; mix well.
  • Place in paper-lined muffin tins, filling cups half full.
  • Beat together cream cheese, sugar and egg.
  • Stir in chocolate chips.
  • Drop a spoonful into each muffin cup of batter.
  • Bake at 350 degrees for 20 minutes.

  1. I did 1/3 cup of sugar and added vanilla. Such a great cupcake!
     
  2. For the filling I used 1/4 cup liquid egg beaters, strawberry cream cheese and mini chips, along with the sugar. I tried one warm out of the oven and they're amazing! I did have extra filling but it definitely won't go to waste.

  4. These are fantastic! I made them with milk chocolate chips and threw some into the chocolate batter as well as the cream cheese. I think I'm going to use mini chips next time. Great recipe!
     
  5. Best right out of the oven, my knees gave way as the first bite melted in my mouth. These went too fast to take a picture. Amazing, and beautiful... and my mouth and my hips will remember them forever. Thank you so much!

Tweaks

  1. These were pretty tasty! I will admit however that I changed a few things... Instead of using all chocolate chips in the "filling" - I used 1/2 cup cinnamon chips and 1/2 cup chocolate chips. Also, I have never been a fan of cupcakes that do not have icing, so I made up some cinnamon cream cheese icing and topped them off! It was wonderful! If you're looking for a nice variation - try adding some cinnamon! These tasted even the better the next day! :-) A note: These took about 29 minutes in my oven.

I work as a professional stagehand for my local union (IATSE Local 26, West Michigan Stagehands), which takes me all over the state and lets me meet all sorts of interesting people. In November of 2008, I was elected to my third three-year term as Recording Secretary of my union local. Currently, I am the news poster for www.megatechnews, a computer tech site affiliated with several other tech sites. My biggest passion is union activism. The more I get involved, the more I want to be involved. I also read like a fiend and enjoy "discovering" local or regional bands at local clubs. Recently, I started making jewelry again after a more than ten-year hiatus. It started as a project for Christmas presents, but doing it reminded me how much I enjoy it, so I may be resurrecting my business soon. I never duplicate a piece, because the entire point is that I do custom work, and will take orders to suit.
