ingredients
- 2 teaspoons olive oil
- 1⁄3 cup onion, chopped
- 1 garlic clove, minced
- 1⁄2 teaspoon cumin
- 1 (15 ounce) can black beans, undrained
directions
- Heat olive oil, onion, garlic and cumin over medium heat until onion starts to brown.
- Add the beans and their juice.
- Stir.
- Simmer the beans covered for about 15-20minutes.
- Stir occasionally.
- Enjoy!

Simple, and simply delicious! This is my new go-to starch side dish recipe, with ingredients I always have on hand. The cloud of fragrance that rose up when I poured in the canned beans was wonderful. When serving, I topped with dollops of reduced-fat sour cream and fresh snipped cilantro. And hot sauce. Yummers!
