Biscuit Topping for Pot Pie

"I'm posting this so I don't keep losing it. My mom made this often - it's a buttery biscuity topping. It doesn't rise as high as regular biscuits, and you can just pour it over the pot pie. It comes out all golden brown and tasty. The pot pie part I make with leftover chicken, some frozen mixed veggies, and either leftover gravy or cream of chicken soup."

  1. I needed a topping for my chicken pot pie and found your recipe. I am so glad I did. This was wonderful and easy. I did have to add about 2 Tbls. of more milk, for the consistency, but that might be because of our elevation: 7200 ft. I wonder if this would work for cobbler but adding sugar to the batter? Great recipe I will be using this for pot pie from now on, thanks so much for posting Joyce!
     
  2. What a tasty and easy recipe for pot pie crust ! I ended up putting the pie under the broiler for a couple of minutes at the end of baking time, just to brown the crust a little bit.
     
  3. Maybe it was the local buttermilk I used, but the topping came out the fluffiest, lightest, tallest biscuit topping I've ever made. the moisture from the filling kept the biscuits perfectly moist and it was so easy to make, just mix and pour it on.
     
  4. I wanted a biscuit topping for my chicken pot pie and stumbled on this recipe. Easy to put together but the directions just say to "pour over pie" leading me to believe the batter should be pour-able . Mine was not; it was very wet and sticky dough. If I had poured it as directed, it would have just been a giant clump. I had to try to dollop and spread across my pie, but I couldn't really spread it so instead i did my best to just place little clumps all over the top. I ended up having to mix up another 1/2 batch to completely cover my pie (9x13 pan). In the end it still tasted great, I put it under the broiler for about 5 minutes at the end to get a little more brow on the top. The biscuit topping was cooked all the way through and didn't sink into the pie like some others I have tried (I have had issues with other biscuit recipes and mixes like Bisquick remaining wet and under-cooked). If anyone had any suggestions as to how to make this more pour-able or easier to dollop, let me me know!
     
  5. This was so quick and easy and delicious! I poured it over chicken enchilada sauce that I had made. I couldn't find tortillas to finish my recipe, and this did the trick! In fact, it might be even yummier! My girls just wanted to eat the crust! Thanks for great solution!
