Biscuit Taco Casserole

- 16 ounces taco sauce
- 12 ounces refrigerated buttermilk biscuits
- 1 - 1 1⁄2 cup shredded sharp cheddar cheese (4 to 6 ounces)
- 1 - 1 1⁄2 cup shredded mozzarella cheese (4 to 6 ounces)
- 1 (2 1/4 ounce) can sliced ripe olives, drained
- 1⁄2 lb lean ground beef
- 1⁄4 cup chopped red bell pepper, if desired (optional)
- 1⁄4 cup chopped green pepper, if desired (optional)
- 4 ounces mushroom stems and pieces, drained, if desired (optional)
directions
- Heat oven to 400 degrees.
- Lightly grease 13 x 9 baking dish.
- Spread taco sauce evenly over bottom of greased dish.
- Separate dough into 10 biscuits; cut each biscuit into 4 pieces.
- Place biscuit pieces in taco sauce, turn to coat.
- Sprinkle biscuits with l/2 cup to 1 cup of each of the cheeses and olives. Mix gently.
- Bake 15 to 18 minutes or until bubbly.
- Meanwhile, in large skillet, combine ground beef, peppers and mushrooms. cook until beef is thoroughly cooked, drain.
- Once baked, sprinkle remaining cheeses over mixture in casserole; top with ground beef mixture.
- Bake additional 5 to 7 minutes or until mixture is bubbies vigorously around edges.

This was a nice recipe and quick to make. Only thing I did not like was I felt the biscuits absorbed the taco sauce and I felt it was a little bland. I will also next time reverse the hamburger mixture and put the cheese on top of the hamburger, as it dried out a little. But the overal concept and flavor is great, just needs a little tweeking.

This was great and very easy! I looked up the original recipe to find out how many olives to use since I like olives (it called for a 2.25-oz can sliced ripe olives, drained). I used all the optional ingredients (but skipped the green bell and doubled the red bell). I also used cheddar-jack cheese in place of the separate cheddar & mozzarella (used 10 oz total). I too like "hot" food so also added a sprinkle of red pepper flakes (about 1/4 tsp but more would have been OK). This was a good way to stretch a small amount of meat and also get some veggies. I also plan to try this with sausage in the future. Thanks for posting happynana!

5***** Delicious Recipes that we enjoyed and will want to have again and again.
4****Recipes that I would make again but make some changes.
3***Recipes that I would probably not try again without some major changes.
I will not give a 1 or 2 rating as I know that the chefs that took time to enter the recipe felt it was deserving to share. I just have different tastes than them.
