Best Macaroni Salad

"The main components of this salad are the macaroni and the dressing. The other ingredients can be changed to suit your tastes. I sometimes omit the tuna and add sliced radishes and chopped scallions. Preparation time includes cooking time for the macaroni, but not the time for chilling."

  • Mix together the mayonnaise, vinegar, mustard, salt, pepper and celery seeds, and stir into the macaroni mixture.

    You're right, the dressing makes this salad fantastic. Plus, it tastes even better if its been chilled first, preferably made the night before. I added carrot slivers and chopped scallions. Absolutely delicious and everyone always asks me for the recipe.

    This really is the BEST Macaroni Salad!! For years, I've tried to duplicate the mac salad I grew up on and this is pretty darn close - and hubby thinks so too! I agree with another reviewer about the tuna - I wasn't going to add it but I had a can in the pantry that had been there for some time and I didn't think I liked tuna anymore - well, this changed my mind! Omitted the green pepper and tomato and used green peas instead due to personal preference. Vinegar was cider and mustard was dijon. Totally awesome! I made this last week to go with cheeseburgers on the grill and hubby and I couldn't stop eating this while the burgers were cooking. Tonite is grill nite again and I've been asked to make sure I make a double batch this time - which I did :). Thanks so much for sharing!

    When it comes to macaroni salad, I have been around the block a time or two. This salad is one of the best I have tried. You are right, it is all about the pasta and that scrumptious dressing. I sub'd celery for green pepper and peas for the tomato. You can vary the ingredients according to what is seasonably fresh. Thanks, Edith. You have got a real winner.

Often I go walking in the morning with my sister, who lives near me on the Maine coast--we truly live in a beautiful place. I share a love of ACC basketball with my brother in upstate New York. Nowadays, I rely heavily on Kitty Rosati's Heal Your Heart book (lots of low-sodium recipes) and Donald Gazzaniga's No-Salt, Lowest-Sodium Cookbook. Other cookbooks I frequently use are Weil & Daley's The Healthy Kitchen and Cooking Light's Five-Star Recipes cookbook.
