Best Leftover Turkey or Chicken Casserole

"There always seems to be lots of turkey leftovers in our house. This casserole uses them and pleases my family as well as making a one-dish dinner. Hope you enjoy making and eating this dish!!"

  • Brown onions, carrots, celery and garlic in oil until onions soften, about 5 minute.
  • Add rice and saute in the oil and veggie mixture until rice is golden.
  • Stir in broth, soup, salt and pepper. Cover pan and simmer 20-25 minutes till liquid is absorbed.
  • Add in turkey, lemon juice, tarragon and peas.
  • Pour mixture into 9x13 baking dish that has been sprayed with cooking spray.
  • Bake 25 minutes at 350 degrees until bubbly hot.
