Best-Ever Meatless Meatballs

    tablespoons chia seeds

    cups parmesan cheese, shredded

    cups walnuts, ground in food processor

    cup oats, ground in food processor (or quick oats)
  • 1
    cup breadcrumbs
  • 1
    tablespoon pizza seasoning or 1 tablespoon italian seasoning
  • 1
    teaspoon vegan beef flavored broth, right now I have Orrington Farms broth base and seasoning vegan beef flavored

DIRECTIONS

  • Mix chia and water and let it sit for 10-15 minutes. .
  • Mix next 9 ingredients in a large bowl.
  • Add chia/water and mix well. (I use my hands to do this).
  • Refrigerate for 30-45 minutes.
  • Form into 1 inch balls and place on baking sheet with parchment paper.
  • Bake in 400 degree oven for twenty minutes, turn halfway through.
  • Now cool and freeze all that you want to eat at a later time.
  • When ready to eat either after making or from freezer. Place however many you want to eat in a casserole dish and cover with water and “beef” flavor. (Amount varies depending on how many you make. I usually make 6 at a time for my family and use about a half cup of water and 1 tsp broth) They should be mostly covered but not all the way.
  • Bake covered at 350 degrees for about an hour (or 1.5 hours if still frozen) flip halfway through.
