  • Mix flour, salt, pepper and paprika. Roll beef cubes in this until well coated.
  • Melt butter in large saucepan. Add onions; saute until soft and tender. Remove.
  • In same pan over high heat, sear beef cubes, a few at a time.
  • Return onions and meat to pan. Set on low heat.
  • Add garlic, bay leaf, thyme and celery. Sprinkle on parsley; add sugar and beer.
  • Bring to simmer while stirring. Cover and poach on low heat, 1 1/2 hours.
  • Add vinegar. Simmer 5 minutes. .

  1. I did use about 1/3 the sugar, and added some mushrooms. I served this over roasted potatoes, and it was just fabulous--meaty, flavorful, everything a stew should be. Thanks for posting!
     
  2. Followed this recipe as written. I really could taste the sugar so next time I will not add as much or even omit it. I had some of the beer mixture left that I think next time I will make some gravy with it. I served this over egg noodles. Made for ZWT 6.
