Beetnik Chocolate Cake

"There are other chocolate cake recipes here using beets but this one uses cocoa and other ingredients I have at home. I don't want to lose it but I haven't tried it yet. It's from Mrs. Arthur Eldridge from the Junior League of San Antonio."

  • Cream eggs with sugar.
  • Mix the oil and beets into the egg mixture.
  • Sift the flour, salt, baking soda, and cocoa into the beet mixture and blend.
  • Stir in the vanilla.
  • Grease a Bundt pan and pour the mixture into the pan.
  • Bake at 350 degrees F. for 30 minutes or until a toothpick comes out clean.
  • If you plan in icing the cake, let it cool at room temperature.
  • The cake stays moist for a long time.

  1. Very good, not overly sweet. I did substitute 1 cup agave syrup for the sugar (i was out of sugar!). I also used fresh grated beets. It did need frosting and was more a "grownup" cake in that is was rich but not so sweet.

I regret not having paid more attention to my Grandmothers' cooking. They made some dishes that I miss and there were/are no recipes for them. <br /> <br />I have a wonderful DH and 2 wonderful sons. Before finding 'Zaar, I was less of a cook and more of a recipe collector but now I try many more things and we're having more fun in the kitchen (at least I am)! <br /> <br />Thanks for all your ratings, comments and help in the forums AND for posting so many great recipes. You've enhanced my cooking skills and expanded my horizons! I've learned so much. <br /> <br />For fun, I also like to read fiction, travel, see movies and shows, shop (and I love to browse thrift shops and rummage/garage sales for cookbooks, etc.). <br /> <br />The discovery of a new dish does more for the happiness of mankind than the discovery of a new star Brillat-Savarin</p>
