Beet, Orange and Apple Salad

- 1⁄2 lb beet
- 2 cups mixed greens
- 1 large orange
- 2 granny smith apples, cored and sliced
- 1 tablespoon olive oil
- 1 tablespoon raspberry wine
- 1 teaspoon sugar
- 1 garlic clove, minced
- 2 tablespoons unsalted sunflower seeds, toasted
directions
- Wash and dry beets. Place beets in a sauce pan with enough water to cover. Bring to a boil, cover, reduce heat, and simmer for 20 minutes or until tender. Allow to cool and peel off skins; cut into 8 wedges.
- Peel and section orange. In a bowl combine orange sections, beets and apples.
- In another bowl, whisk together olive oil, vinegar, sugar and garlic. Pour over beet mixture and toss well. Arrange 1/2 cup mixed greens on 4 salad plates. Top with beet mixture, sprinkle with sunflower seeds and serve.

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
