Beefy Spanish Rice

"Recipe I found on the internet years ago and I absolutely love it because it's different. Recipe yields enough for main dish, so cut down servings if you want it to go with a Mexican dinner, but I think it's fabulous! And easy to make! I usually use whole can of corn because I love corn!"

  • In a large saucepan over medium heat, heat the oil.
  • Add the rice, onion and bell pepper and saute for 5 minutes, or until onions are tender.
  • Add the ground beef and saute until browned.
  • Drain excess oil and fat.
  • Add the corn, tomato sauce, ketchup and water.
  • Reduce heat to low, cover and simmer for 20 minutes or until rice is cooked, stirring occasionally.
  • Season with salt, pepper and garlic powder to taste.

  1. It's a very nice recipe, easy and quick to make. I miss a little spice and some fresh flavors (fresh herbs or scallion) I made this in two parts as is and then my own additions. I added some extra spiced peppers and some fresh herbs which I really felt added to the dish. Maybe that is just my taste, but it was a bit bland, but overall, a nice recipe. I did use frozen corn which I prefer and fresh garlic but I just thought it need a fresh flavor to this dish. <br/><br/>It was easy, hearty and very nice.<br/>Made for PAC 2011
     
  2. This was our supper tonight, served as a main dish straight out of the pot. Not dry like typical Spanish rice; somewhere between a casserole and thick soup, and very tasty. We used fresh sliced garlic put in with the onions instead of garlic salt later, and the whole can of corn; otherwise just as listed. True comfort food!

I became a mommy September 26th, 2008 and have found that I enjoy cooking a lot more than I used to now. I enjoy finding new recipes to try and making sure I get the stamp of approval from the man of the house...:) I have four dogs that used to get left overs, but lately we have been the ones cleaning our plates! Sorry pups!
