Beefy Spanish Rice

"Credit for this dish goes to Ruth Ann Klassen of Aberdeen, Idaho who says this recipe came from her husband's grandmother. It's quick to make and very tasty. Hearty helpings of this specially seasoned rice will disappear in a hurry at your dinner table. Note: Cooking time does not include time to cook rice. An option is to use instant brown rice to reduce prep time."

directions

 • Cook rice according to package directions.
 • Meanwhile, in a skillet, cook beef and onion over medium heat until meat is no longer pink; drain.
 • Stir in tomatoes, seasonings and rice.
 • Transfer to a greased 2-qt. baking dish. Cover and bake at 350° for 50-55 minutes. Sprinkle with cheese.
 • Bake, uncovered, 5-10 minutes longer or until cheese is melted.
 • **Idea: Using instant brown rice in this recipe cuts down on the cooking time. Try substituting cheddar cheese with a more mild Monterey Jack Cheese.

 1. Wish I could leave more than a five star rating for this. It is great and we enjoyed it a lot! I used regular brown rice that I cooked until the water was almost absorbed. Didnt cook until tender because I was worried about mushy rice after baking for almost an hour. Used celery seed instead of celery salt and garlic powder instead of garlic salt. Put my cast iron pot in the oven with the lid on and baked for 50 minutes. The rice was perfect and it smell so good. Topped with cheddar cheese and put it back in. This will be made again many times! Thank you DuChick for sharing this recipe with us. Made and reviewed for the Photo Tag Game.

I am... ~a mother of 2 kids (19 and 22) who are extremely picky eaters. The mere mention of "healthy" sends them running in the opposite direction. They prefer the creamy, cheesy, fried stuff that they weren't brought up on! ~a wife of a wonderful man who fights an expanding waistline and will lovingly eat most anything I set before him. Everything is 5 stars to him. :) He's the easiest customer a cook could ask for! ~a teacher who tends to reach for comfort foods to relieve stress. I am a middle school reading specialist. The miracles I see on a daily basis keeps me going! But it's also stressful, so keep me away from the cookie jar! I really have to fight off the sugary, fat-laden stuff that has no worth beyond the momentary comfort in my mouth. ~and I'm also a daughter who was brought up on home cooked meals back when calories meant nothing and taste was everything! That is an idea built into my system that's hard to shake! My mother raised 8 kids (I'm #7) on her home-cooking and I always teased her that she didn't raise a single skinny kid! I luckily inherited her great love of cooking and baking. (I miss you Mom!) ~finally, I'm "mom" to the best Bichon in the world. He is Quincy, our kid in a dogsuit. He's 13 years old, but still a puppy to us. Below are photos I've taken of some of my favorite recipes found on Recipezaar:
