- 1 lb london broil beef
- 8 cups beef broth
- 1 lb potato, diced
- 1 (8 ounce) can peas
- 1 (15 ounce) can green beans
- 1 (15 ounce) can diced tomatoes
- 1 (15 ounce) can corn
- 1 cup carrot
- 1 small onion
- 2 tablespoons olive oil
- 1⁄2 cup rice
directions
- Brown beef and set aside. Dice onion and carrots and saute in olive oil.
- Add beef broth and cook for 15 minutes.
- Add beef and rest of canned vegetables.
