  • Dissolve the beef boullion cube in the 1 cup of water.
  • Brown beef and drain.
  • To the beef, add onion, green pepper, seasonings, tomatoes, corn, and bullion with water.
  • Bring to a boil.
  • Stir in rice and remove from heat.
  • Cover.
  • Let stand 5 mintues, fluff with fork.

  1. I've been making this since 1972 when I found the recipe on a box of minute rice. Over the years, our family grew to 8, so I'd quadruple recipe. Everyone loved it. As the kids got older, and worked, they'd take leftovers for lunch and would heat up in microwave. Still a hit, made it tonight, for two.
     
  2. My mother used to make this all the time when I was growing up. I loved it! She's gone now, and this is the best comfort food. I never could quite make it just like hers until I found this recipe. Thanks so much! So easy and quick to make! It is great as leftovers as well!
     
  3. Turned out really good! So easy to throw together! We had enough for a big dinner (for 2), Lunch the next day (put it in tortillas with a bit of salsa and cheese...was really good!) and then dinner again the next day! Thanks for a keeper!
     
  4. This turned out so good!!! I did follow the recomendation of the previous review and added extra chili powder,cumin and red pepper. With those additions this turned out awesome! I little spicey but very good! I did also use ground turkey instead of beef. Otherwise, I followed the recipe. This was very simple so I will be making it often. Thanks for a great recipe!
     
  5. I've also eaten this all of my life. I call it my "standby recipe". Makes alot, easy, and I always have the ingredients on hand! I made it tonite again, and added more chili powder, 1/4 tsp Cumin, and 1/2 tsp. crushed red pepper flakes! I also used BROWN rice, for more fiber, and my family didnt even notice!!! :) I ALWAYS use frozen corn and add it the last 5 minutes. Nice, fresher taste.

Tweaks

  1. Made the original recipe & remembered it well!! 2nd time I made it w/brown rice instead. Reduced the water to 1/2 Cup, added Lime zest & the juice from the lime, 1/4 tsp. Cumin, frozen "roasted" corn (Trader Joes) & fire-roasted diced tomatoes (Hunt's). Serve in bowls and top w/grated cheddar...WOWIE. If you don't care about calories: sour cream & guacamole! THANKS FOR THE MEMORIES!

  3. I made this tonight. It was really good and really really easy. We are going to use the leftovers to make wraps. I did make a couple of changes. I used rotel tomatoes instead of diced tomatoes and doubled the rice (2 cups), water (2 cups), and boullion (2 cubes)so that it would go a little fruther and have less cholesteral per serving. Great recipe!
