Beef Liver With Onion Gravy

  • Saute bacon until crisp; remove to paper towel.
  • Dredge liver in flour.
  • Brown in bacon drippings.
  • Remove to a plate.
  • Add sliced onions and saute 3-4 minutes.
  • Return liver and bacon to pan.
  • Add enough water to barely cover; add thyme and ketchup.
  • Simmer 20 to 30 minutes.
  • Serve with mashed potatoes.

  2. I don't eat liver, but passed this on to my mom who made it for herself and my brother. She has been helping me out lately due to an injury, so volunteered to make this. This is her rating. She does not have a computer, otherwise she would join up herself
     
  3. I made this recipe the other day. I used 4 slices of bacon, 3 Tbsp. of ketchup along with 2 c. water. I simmered exactly for 20 minutes, but found the prep time was 39 min. That included cooking the bacon, liver and saute'ing the onions. My husband and I really liked the taste of the gravy, (especially over the mashed potatoes) but my husband said the liver had no taste. He said the liver tasted blah. "SORRY"!!! Besides our usual favorite of liver, bacon and onions; our 2nd favorite liver dish is: Chili Liver. The recipe is from the 1976 Campbell's Cookbook, Cooking with Soup. I'll post the recipe soon.
