Beef Couscous Crock Pot

  • Brown beef in a heavy skillet and pour off excess fat.
  • Add broth, pepper, olives, onion, garlic, cumin and thyme.
  • Top with beef, cover and cook on low 4-5 hours until vegetables are tender.
  • Add water to a small sauce pan and bring to a boil.
  • Stir in couscous, remove from heat and cover.
  • After 5 minutes, remove cover and stir with a fork.
  • Spoon couscous on to individual plates and top with the beef mixture.

  1. This was decent tasting, but a little runny as the others stated (and I did NOT add the water). Probably won't make it again though, as most crock pot recipes are just as simple.
     
  2. Molly, did you add the 1 1/3 cup water with the ingredients in the crockpot? I did and it was very soupy. Upon reading the recipe again I relized the water was just for the couscous. The only things that were supposed to go in the crockpot were the broth, beef and veggies. It still tasted alright but I will refrain from reviewing until I make it properly.
     
  3. A very tasty combination that reminded me a lot of chili (guess it was the cumin). I didn't expect the beef and vegetables to be quite so soupy, but over the couscous it worked out OK.
