BBQ Ham Caesar Salad

This is a great easy recipe for when you have all that left over ham at Christmas. The original recipe calls anchovies, but unfortunately our family does not like them, and so I use dried bacon bits. I also use garlic croutons when available.

- 250 g carved leg ham
- 1 cos lettuce, torn
- 1 cup crouton
- 1⁄2 cup shaved parmesan cheese
- 1⁄2 bunch fresh parsley leaves
- 4 hard-boiled eggs, quartered
- 2 anchovies, chopped
- 2 tablespoons mayonnaise
directions
- Barbecue the ham, and then toss the lettuce, croutons, parmesan and parsley in the mayonnaise and dress with eggs, anchovies and ham.

Great, easy, and uses really common ingredients for this big bang of taste! The only additions were: red onion, sliced thin, and some grape tomatoes. Other then that, enjoyed this wonderfully! Great way to use up ham, you could probably use some cheese too, (swiss) but certainly is not needed. The two tablespoons of mayo was all needed. Thank you for such a lovely salad!
