Banana Split Bars

Yummy bars to use up those over-ripe bananas. You can also ripen bananas quickly by placing them in the refrigerator for several hours.

  • Preheat the oven to 350 degrees. Grease and flour a 13x9 pan.
  • Bars:.
  • Combine the flour, sugar, baking soda, salt and cinnamon in a large bowl. Set aside.
  • In a separate bowl, mash bananas with a fork to make 1 cup. Add pineapple with juice, eggs, oil and vanilla. Stir in cherries.
  • Stir flour mixture into banana mixture, mixing until well combined. Pour into prepared pan. Bake 30 to 35 minute Remove from the oven and let cool 30 minute.
  • Icing:.
  • Heat butter and milk in a saucepan until the butter melts. Remove from the heat. Stir in the confectioners sugar and vanilla. Beat until smooth. Spread the icing over the bars.

    This was very moist and delicious. I didn't add any frosting and thought it was great without it. In keeping with the Banana Split theme, I may drizzle some melted chocolate over top next time. Thanks for this quick and yummy recipe.

    We have made this twice. It is a great recipe that is very easy to prepare and has wonderful flavor. Also everyone raves about it and about how moist it is. I prefer to make a cream cheese frostening for this but the icing in the recipe is okay just too sweet along with the sweetness of the cake. Used half of a 10oz can of crushed pineapple. Thought it could use just a few more cherries then what the recipe calls for. I will make this over and over again we enjoyed it!

    This was a easy cake to make. We enjoyed it. Next time I might try a fresh strawberry frosting with a little chocolate drizzled on top. Thanks for the posting it.
