Banana-Sour Cream Bars

ingredients
- 1⁄2 cup butter
- 1 1⁄2 cups sugar
- 2 large eggs
- 3⁄4 cup sour cream
- 2 large ripe bananas, mashed
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1⁄2 teaspoon salt
- 1 teaspoon baking soda
directions
- Cream butter and sugar.
- Beat in eggs, one at a time.
- Stir in sour cream.
- Stir in mashed bananas and vanilla.
- Combine flour, salt, and baking soda.
- Stir into the wet mixture.
- Pour into a greased 15 X 10" jelly-roll pan, and spread evenly.
- Bake in a preheated 350°F oven for 15- 20 minutes or until done.
- Cool.
- Cut into squares.

I added 1/4 cup of buttermilk with the sour cream (I didn't want to take any chances of them being dry.) I baked them 25 minutes and frosted with cream cheese frosting. My husband's response - "Now, that's what I'm talking about." We have tried several other banana bar recipes and none have been moist enough for our taste. This recipe is now going in the book. Thanks!!
