  • Combine first 6 dry ingredients in large bowl.
  • Mix well.
  • Beat egg, banana and melted butter together in small bowl until smooth.
  • Add banana mixture to dry ingredients.
  • Stir just until moistened.
  • Stir in nuts, if desired.
  • Fill greased muffin cups almost full.
  • Bake at 375°F for 20-25 minutes, or until top springs back when lightly touched.

  1. Can you turn this into a bread/loaf? I've used this recipe a million times and today I want to make this recipe but into a bread instead of muffins.

  1. Banana bread and muffins are moist by nature, but these were incredible! The addition of oats makes this a very hearty muffin. I made a few changes due only to personal preferences. I used whole wheat flour instead of all-purpose, brown sugar instead of granulated, and substituted half the amount of butter with applesauce. When mashing my bananas, I leave a few small chunks, just because that's the way I like it. My compliments to the chef!
     
  2. I rarely share recipes with people, but this one is an exception! I've made them several times now, modifying by adding a combination of coconut, chocolate chips, craisins, raisins, and a variety of different nuts (pecans, sunflower seeds, walnuts) and they've always turned out AWESOME despite my oven being terrible! they're super good with peanut butter slathered on them as well, super hearty breakfast!!!

So easy to make- actually the first time I've ever made muffins, and within 3 batches I was able to make substitutions (applesauce for butter, whole-wheat flour for white, honey for sugar) and still have amazing muffins! I would definitely recommend this to friends, and actually already have!!!
     
  4. This food item changed my life. To tell the full story I must go back to the beginning. I was born on a cold rainy day my parents had no care for me. No one wanted to adopt me so the monkeys took me in. Curious george, harambe, and big yellow all loved me so much. And my "mom" always mde the most delicious monkey funky stew. With the banans oh so ripe and tatsty. and then it happened. The dora tribe and her terrible mongey boot killed my mother in cold blood. As i sat there staring in to her eyes she said to me seak revenge my little monky. seak vengence. On that day i swored to kill boot. BOOT WILL DIE I SCREAMEd. And then the rain fell. Remberinging me of my sad cold birth. I trained. I became quite good with a sword. After 3 months of training i was ready. I put the mud on my face as camoflage. And i sought him out. With my katana in hand and him resting peacfully i stabbed him. he died. ANd after thta day ive been empty. No family. No goal. And then i made this dilicious meal. It tast just like funky moneky stew. The banan so teneder. AND TASTY. SO GOOOD.
     
  5. Delicious. I didn't have enough bananas, only about 1 1/4 cups so I added plain yogurt to make up the 2 cups that were supposed to be bananas. Excellent recipe. Thank you.

  1. Terrific base recipe for muffins. I made a few changes though... substituted applesauce for the butter, except for 2 tbsp. Half of which I mixed with brown sugar and nuts to make a topping. I also added some grated carrots, raisins and extra spices (including lots of ginger & cinnamon). Made it a second time and added an apple, chopped into medium pieces. Great recipe, thanks so much for sharing!
     
  2. Really yummy and easy to make. Some slight modifications: -I used more coconut oil and less butter for the oil quantity in this recipe, ( to be healthy), which yielded a lighter fragrant/nutty touch - tsp of vanilla - tsp of cinnamon Yum! Also: Walnuts worked great for me. I also used 3 bananas it was extra moist.
     
  3. Add 1/4 cup maple syrup Teaspoon of vanilla Use demure brown sugar Add a cup of raisins Top with maple sugar They are to die for!
     
  4. I was missing half a cup of bananas but replaced it with a third cup buttermilk and 4 tbs of honey. It was moist and fluffy and oh-so-yummy.
     
  5. I can't rate this recipe because I changed it so much, but what I made came out delicious! I only had one over-ripe banana, so I used it plus some crunchy peanut butter, shredded apple, and raisins in place of the 2 cups of banana. It came out to about 1/2 cup of each. I'll have trouble convincing my family to try the actual recipe, since these came out so well!
