ingredients
- 1⁄2 cup vegetable oil
- 1 cup sugar
- 2 eggs, beaten
- 3 bananas, ripe & mashed
- 2 tablespoons milk
- 2 cups flour
- 1 teaspoon baking soda
- 1⁄2 teaspoon baking powder
- 1⁄2 cup walnuts, chopped
directions
- Preheat oven to 350°F.
- Beat oil and sugar together. Add eggs and banana pulp and beat well.
- Add sifted dry ingredients, milk & vanilla. Mix well and stir in nuts.
- Pour into greased and floured loaf pan.
- Bake for about 1 hour. Cool well and store overnight before cutting.

I am getting ready to put two pans in the oven right now. I have been making this for a few months now and the family just loves it. I have been putting walnuts in mine and will try pecans next time. I also put in a generous dose of Sailor Jerrys spiced rum to really make it yummy. I like to top a slice with whipped cream and serve with a good cup of coffee for dessert.

I followed the recipe exactly (4 small bananas instead of 3, and I also noticed that adding vanilla was in the instructions, so I added 1 teaspoon). This made 1 large, moist, banana-y loaf of deliciousness. I even forgot to add nuts, and ended up stirring them 10 minutes into baking. The recipe is very forgiving, I didn't even notice. Perfect banana bread right here!!!!!
