Banana Flax Muffins

"This is a recipe I came up with for flax seed using recipe #9176 by Evie*. I tried changing it and it worked perfectly. I sometimes add dried or freeze-dried fruit to these. This recipe make a wonderful flax muffin. The addition of flax seed to recipes gives a nutty flavor without nuts."

  • Preheat oven to 375°F.
  • Grind flax seeds.
  • Mash bananas.
  • Mix bananas, flax and egg.
  • Mix dry ingredients together and add.
  • If needed add milk, one tablespoon at a time.
  • It depends on the size of your bananas and the consistency.
  • Fill greased muffin tins.
  • Bake for 20 minutes.

    Easy enough for a 6-year-old to make. Super Delicious and effective. Personal tip: Make sure your nanners are brown.

    they are pretty good. a little dry. will make them again and might add another 1/2 banana or tablespoon of milk. :)

    Wonderful, versatile recipe. I have made these several times, and done variations on the theme. This is a very stable, dense muffin, so it stands up to creative license. I have tried the applesauce and spice addition another reviewer suggested, and also added chocolate chips or a swirl of Nutella on top to make it sweet. Speaking of sweet, I have found that dropping the sugar down to 1/2 cup doesn't seem to adversely affect the taste or texture.

    This is my fav muffin recipe! It's so quick and easy. Anytime my bananas are past their prime this gets made. My husband and mother both LOVE them. They are great for breakfast or a snack. I find myself using more milk than what's called (even with only using 3 bananas) I've also used up to 4-5 bananas with out the recipe breaking. I highly recommend using all organic ingredients and "If You Care" large baking cups. They don't need to be sprayed and the muffin don't stick.
