Banana Chocolate Chip Oatmeal Muffins

"Basically what the title says! :) I used Smart Balance 50/50 Butter Blend that has added Omega 3 in it. This makes them a great healthy brain treat."

  • In one bowl mix all dry ingredients. Except chocolate chips. Adding softened butter last.
  • In another bowl mash bananas until smooth, but not liquidy.
  • Add all other wet ingredients to mashed banana bowl.
  • Once wet ingredients are thoroughly mixed pour into dry ingredient bowl.
  • Stir until completely combined. Then fold in chocolate chips.
  • Fill PAM sprayed muffin cups 2/3 way full.
  • Bake at 375 for 18 minutes. Rotating halfway through.
  • Enjoy deliciousness. :).

  1. Great recipe! I made a few changes to healthify it. I used egg whites instead of eggs, splenda to replace the sugar, and unsweetened applesauce rather than butter. I did add in a little butter flavor (extract). They look, smell, and taste wonderful!
