- 1 1⁄2 cups whole wheat flour
- 1⁄2 teaspoon salt
- 1 teaspoon baking powder
- 1⁄2 cup dried cherries
- 1 egg, lightly beaten
- 1 tablespoon olive oil
- 2 large ripe bananas, mashed
directions
- Preheat oven to 200°C Line baking sheet with parchment paper.
- In a bowl, combine flour, salt, and baking powder. Mix well. Stir in dried cherries.
- In another bowl, combine beaten egg with olive oil and mashed bananas. Pour wet ingredients onto dry ingredients and stir until well combined. The batter is pretty wet.
- Form balls (size between golf and tennis ball) out of the batter and place them on the baking sheet. Bake for 15 to 20 minutes or until golden brown.
