  • Preheat oven to 270°.
  • Grease and flour a 9 x 13 pan.
  • In a small bowl, mix mashed banana with the lemon juice; set aside.
  • In a medium bowl, mix flour, baking soda and salt; set aside.
  • In a large bowl, cream 3/4 cup butter and 2 1/8 cups sugar until light and fluffy.
  • Beat in eggs, one at a time, then stir in 2 tsp vanilla.
  • Beat in the flour mixture alternately with the buttermilk.
  • Stir in banana mixture.
  • Pour batter into prepared pan and bake in preheated oven for one hour or until toothpick inserted in center comes out clean.
  • Remove from oven and place directly into the freezer for 45 minutes. This will make the cake very moist.
  • For the frosting, cream the butter and cream cheese until smooth.
  • Beat in 1 teaspoon vanilla.
  • Add icing sugar and beat on low speed until combined, then on high speed until frosting is smooth.
  • Spread on cooled cake.
  • Sprinkle chopped walnuts over top of the frosting, if desired.

This is the best recipe I ever tried from the net, I didn't have butter milk though so I used instead full fat milk and it came out beautifully.<br/>my kids loved it since it's very moist and juicy, unlike many of other recipes.<br/>I would change one thing next time, reduce the icing sugar amount on the icing, it came out a bit too sweet to our taste. but as a whole. This is THE recipe for Banana cake.

  3. Well, mine is still in the oven...smells great. But, I am not at a higher elevation, and it has been an hour, and still just batter in the middle. It is not even close to being done. I am taking the previous reviews advice, turned it up to 325 and we'll see if it gets done in time.
     
  4. amazing cake, but at 7500 feet elevation, I had to cook an extra 25 minutes at 325 to get it cooked....
