Banana Beignets

  • Heat Oil in deep fryer to 360.
  • Whisk eggs in a large bowl.
  • Mash banana.
  • Add Banana, flour, milk, sugar, baking powder, and salt to eggs.
  • Whisk until smooth.
  • Drop TBS of batter into hot oil.
  • Cook until golden on both sides.
  • Remove and sprinkle powdered sugar over Beignets while still warm.
  • Enjoy!

    mades these for my grandson and everyone loved them lite and fluffy like a donut but takes like banana bread. I had to make another batch the very next day i didn't have anymore bananas but they were really good anyway, I added cinnamon to the batter

    YI actually followed the recipe exactly!! YUM!! Found this while searching for a different recipe for ripe bananas. So easy and so yummy. The balance of flavors is perfect, very delicate. Thanks for the recipe - we'll make them again.

    These are EXCELLENT! I really think they tasted like french cruellers from the bakery almost! Just in banana flavor! They were so quick and easy to make to! Definitely am making these again!

Tweaks

    Just a few drops of vanilla in the batter makes these perfect. Could also be drizzled with caramel sauce for Thanksgiving morning to get the kiddos out of the kitchen. Provide wet naps for cleaning up little fingers.
