Banana Applesauce Bread

I developed this recipe because I love homemade banana bread but wanted a recipe that didn't include oil or butter. This recipe allows me to enjoy the flavor without all the fat.

  • Grease and flour 4 mini loaf pans. Preheat oven to 350°F (175°C).
  • In one bowl, whisk together flour, soda, salt, and sugar. Mix in slightly beaten eggs, applesauce, and mashed bananas. Pour into prepared pans.
  • Bake at 350°F (175°C) for 40 minutes, or until a wooden toothpick inserted in the center comes out clean.

    For lowfat banana bread, this is very good. Surprisingly moist and delicious- you can even add some dark chocolate chips since there is no butter or oil in this, and not feel guilty about it! Thanks for an easy and yummy recipe.
