Balsamic Orange and Barley Salad

- 3 cups orange juice
- 3 cups water
- 1 1⁄2 cups pearl barley
- 1⁄3 cup balsamic vinegar
- 1 tablespoon Dijon mustard
- 1⁄2 cup olive oil
- 1⁄4 cup fresh parsley, chopped
- 2 tablespoons fresh rosemary, chopped
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 cup scallion, sliced
- salt and ground pepper
directions
- In a heavy saucepan, bring orange juice and water to a boil; add barley, reduce heat. Cover and cook 35-45 minutes. Remove from heat; let stand 25-30 minutes. Drain; reserve.
- In large bowl, combine vinegar and mustard. Whisk in oil to create dressing. Stir in parsley and rosemary. Add reserved warm barley, peppers, and scallions and toss to to coat. Season with salt and pepper , if desired.
- Refrigerate. Let stand at least 1 hour before serving.

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
