Balsamic Cucumber Salad

"This is a quick, lite cucumber salad. The balsamic vinegar adds a zing! I made this recipe because I was looking for quick healthy snack and because mom keeps telling me to eat my veggies! :) Many cucumber salads call for very thin slices which adds to prep time. Here you just dice them quickly!"

  • Combine all ingredients in a bowl (leaving out cucumber).
  • Slice cucumber lenth wise into quarters, then into 1/2 inch slices.
  • (Cucumber can be cut any way, but I like bite size crunchy pieces.) Mix cucumber into dressing mixture.
  • You can marinate if you wish, but tastes great right away!

  1. Delicious! I doubled the dressing because it didn't look like enough. I let it sit overnight and the dressing the recipe called for would have been plenty! It is a great side dish salad! I'll be making this again!
     
  2. Great recipe! I had to throw together a bareque for some unexpected visitors tonight. I used regular mayo and garlic pepper salt in place of the fat free mayo and the fresh garlic since that is what I had on hand. I had absolutely no problems whisking it together nice and smooth. But in defense of the other reviews I have had problems whisking fat free mayo with vinegar and/or lemon juice before to where it comes out "coddled" looking. I think it has to do with the way the mayo is prepared. I mixed the dressing together in one tupperware container, added the cucumber chunks, popped on the lid (made sure it was on good and tight) and then handed it to my granddaughter who had a blast shaking the salad to mix it all up. In the fridge it went while I prepared my marinade for the chicken. It really helped my dinner go smoothly with wonderful compliments. Thank you so much for this recipe.
     
  3. Easy to make, used a cordless handmixer (boatmoter)and dressing stayed blended just fine. I used roasted garlic instead which I think made a smoother taste. Nice zing.
     
  4. I had a very difficult time getting my mayo to blend smoothly with the other dressing ingredients. It is very tasty but a bit "curdled" looking because even with a whisk I couldn't get my dressing smooth. I added corn and tomatoes. Maybe next time I'll try a blender for the dressing.
     
  5. Nice way to serve cucumbers for a change.
